Our Pastrami comes in two varities: Plate Pastrami and First-Cut, with one notable difference between the two.  Plate Pastrami, as its name suggests, comes from the plate, which was the fattier cut originally used to make Pastrami and is thus considered more "authentic."  First-Cut Pastrami is made from the brisket and is much a leaner variety of Pastrami.  Both varieties are coated with spices, smoked and cooked to perfection!
